A bit of a copycat

 After lady_karelia  posted that she had made latkes and applesauce, I've been craving that.  So tonight I made potato pancakes and a recipe I have for chunky cinnamon-ginger applesauce.  Yum!  Thanks for the idea!

My son has a bad cold.  My husband stayed home with him in the morning, and I arranged for my class to be covered in the afternoon.  He seems to be feeling better tonight.  Hopefully we'll all get more sleep tonight than last night.

On Wednesday evening I'll be flying out to go to a conference in Minneapolis, so I'll be "out of business" as far as Live Journal is concerned from Wednesday through Saturday.  I'll miss you guys.  Try not to do anything too exciting while I'm gone.  :-)

Oooo, sorry I mentioned excitement after the week you've had. :{

My son is getting better and is looking forward to a visit to Grandma's while I'm gone. I'll be able to see some friends from when we lived in Minnesota, so I hope that at least parts of the conference will be fun (i.e. visiting the local restaurants/pubs in the evenings) :-)
